Brewing Notes

09.02.2011 - Has fermented out completely, but the flavour isn't sour enough. Tastes good though. At this stage the ABV could be raised by 1-2% to help offset the darker specialty malts.

Tasting Notes

After carbonation, it is tasting mildly tart and mildly fruity with raspberries coming through.
I would like the Lambic flavour to be a bit more intense next time.
The flavour has matured with time, plus it has soured up slightly. Will make some small
